  • 1 can of black beans
  • 1 c. frozen corn
  • 1 avocado
  • 1/2 c. cherry tomatoes
  • 1 jalapeño
  • 1/4 c. cotija
  • 1/4 medium red onion
  • 1 clove garlic
  • 1/4 c. cilantro
  • 1/2 tsp. cumin
  • 1 lime
  • 2 tbsp. extra-virgin olive oil
  • 1/2 tbsp. honey
  • Kosher salt
  • Black pepper

  1. Prepare all the ingredients: rinse and drain black beans, thaw frozen corn, remove seeds from jalapeño and chop, cut the cherry tomato in quarters, dice onion and garlic, juice the lime, chop cilantro, crumble cotija, and grind cumin and black pepper.
  2. Put beans, avocado, tomatoes, corn, jalapeño, onion, and cilantro in a bowl

  • 4 ears of fresh corn
  • 3 medium red potatoes
  • 2 containers of chicken stock
  • 4 slices bacon
  • 1 c. half-and-half

  • 1 small clove of garlic
  • Black pepper

  1. Prepare ingredients: dehusk corn and cut from cobs (scrape remaining liquid too), chop onions and potatoes, chop, dice and crumble garnishes.
  2. Put oil or butter in a pot over medium heat. Add onion and ½ teaspoon of salt, and cook, occasionally stirring until onion is translucent.
  3. Next, add potato and water or stock, cover and boil over high heat. When the potato softens, add corn and cook some more for up to 2mins.

  • 150g flour
  • 1 tsp baking powder
  • 1 tsp smoked paprika
  • 160ml whole milk
